Baked Baby Potatoes

Preparation Time: 1 - 1 1/2 hours
Prepares: 4-6 servings


1 kg. baby potatoes, rinsed
2 springs rosemary, leaves only, chopped
2 large garlic cloves, minced
½ cup extra virgin olive oil
Salt, to taste
Black pepper, to taste


Preheat the oven to 200°C (392°F).
Rinse the potatoes and place them in a medium baking dish.
Add the olive oil, garlic and rosemary, and toss until potatoes are coated.
Season with salt and black pepper, to taste.
Bake in the center of the oven for 20 minutes.
Rotate the baking dish, cover with aluminum foil and bake until potatoes are tender, about 20 more minutes.
Remove the aluminum foil and gently turn the potatoes upside down.
Bake until golden brown, about 20 more minutes.
Remove from the oven and transfer to a serving dish.
